Food is the energy source for our bodies. We can’t function properly and do the things we need to do if we don’t have the proper nutrition. Most of us know this on an intellectual level, but our busy lives preclude easy access to good food. So we resort to nutrient deficient, low-energy sources like junk food, fast food or snack bars to satisfy our hunger. What’s a busy person to do?
11 Tips for Healthy Eating

Consider these pointers when
preparing food for a busy person on the go!

  1. Organize your kitchen, pantry and refrigerator – this will help make meal prep a breeze!
  2. Invest in quality storage containers, ideally ones made of glass, – one of the most essential meal prep tools.
  3. Make meal planning a priority – carve out some time every week and you’ll reap the rewards
  4. Decide what you are going to make first. Don’t try too many new recipes or different vegetables each week. Focus on two recipes per week, one you’ve made before plus a new one. Plan for only two different types of vegetables for the week.
  5. Shop your pantry first – before you make your shopping list, take an inventory of what you already have.
  6. Make a list before you go to the store; it will make your trip more efficient and also save you money.
  7. When you come home, clean and cut up your veggies so they are all ready to go.
  8. Cook when you have the time so you can enjoy it later. Consider meal prep twice per week.
  9. Use tools like slow cookers, pressure cookers or a Sous Vide and your meal will cook while you’re busy doing something else. If you make your protein in big batches with minimal seasoning, you can pretty much use it as the base for anything. Chicken breasts seasoned with salt, pepper and garlic made in the Sous Vide are moist and simply delicious and can be used in pretty much any recipe calling for chicken!
  10. Make extra soup, chili or a big batch of spaghetti sauce and freeze some for later. Or roast a big tray of veggies for use throughout the week.
  11. Make the process enjoyable. Eating healthy foods is good for you, so look at this time as part of your self-care routine.

Slow Cooker Mediterranean Stew
1 butternut squash - peeled, seeded, and cubed
2 cups cubed eggplant with peel
2 cups cubed zucchini
1 (10 oz) package frozen okra, thawed
1 (8 oz) can tomato sauce
1 cup chopped onion
1 ripe tomato, chopped
1 carrot sliced thin
½ cup vegetable broth
½ cup raisins
1 clove garlic, chopped
½ tsp ground cumin
½ tsp ground turmeric
¼ tsp crushed red pepper
¼ tsp ground cinnamon
¼ tsp paprika
Directions
In a slow cooker, combine butternut squash, eggplant, zucchini, okra, tomato sauce, onion, tomato, carrot, broth, raisins, and garlic. Season with cumin, turmeric, red pepper, cinnamon, and paprika. Cover and cook on low for 8 to 10 hours, or until vegetables are tender. Enjoy!
