nycGREENxSub-Zero: Urban Farm-to-Table

By Diana Mosher -- On Thursday, May 18, Sub-Zero hosted the NKBA Manhattan Chapter Meeting at their showroom in the A&D Building. The evening’s festivities kicked off with a warm welcome by Bianca Olsson, Trade Representative, Sub-Zero Group; Crystal Piligian, Manhattan Showroom Manager; and Julie Schuster, President, NKBA Manhattan Chapter. The focus: farm-to-table dining with special presentations by two culinary rock stars. 

Sub-Zero’s corporate Chef Phil Raspanti talked about advances in urban farming and prepared delicious, locally sourced bites alongside local wines. Cookbook author Leeann Lavin talked about using botanicals from the garden to enhance cocktails with a demo for her “Let’s Make it Interesting” cocktail. It was the signature cocktail of the evening and featured in her book The Art of the Garnish: Over 100 Cocktails Finished With Style.


Leann also presented her own farm-to-table insights during a Q&A moderated by Manhattan Chapter Programs Chair Joan Ravasy, with a special introduction by Past President Toni Sabatino. Toni shared anecdotes from their friendship, which began after Toni discovered Leeann’s The Hamptons & Long Island Homegrown Cookbook. “It was the beginning of a food love story,” said Toni. Since then, Toni has experienced Leeann’s herb garden and culinary magic first-hand in a range of settings from Long Island to the mountains of Ecuador. 


Leeann’s presentation explored the deep connection between gardening, cooking and interior design. “All require balance, color and taste. Taste is defined as the love of beauty. When I think about the passion and magic that infuses what we do, I think taste is what brings it all together. And we share the desire to gather,” added Leeann. "For us, in these professions, we like to share what we create.”


Leeann also touched on the shift away from gourmet cuisine that requires exotic ingredients. Today, we crave dishes prepared with fresh, local ingredients that are readily available in the “backyard,” even in Gotham—in the window box, terrace or rooftop. Or from the local green market. Eat with the seasons (root vegetables in the winter for instance) and remember that you can use your refrigerator or freezer to preserve the season’s bounty for later.

With the Memorial Day holiday, it seems that everyone you speak with is: a) on vacation b) planning a vacation or c) remembering their vacation. And this year, demand for those get-aways is greater than ever, from what the news keeps telling us. For me, fitting it in around the work is always the hardest part. And that is one of the reasons that I am always so happy that NKBA Manhattan stays active in the summer months. For when you’re here in the City, there is always something coming up that allows us to enjoy those wonderful balmy summer nights that we have here in New York. 


We just came off of ICFF and a lively May chapter event at Sub-Zero, as well as all of the NYCxDesign Week activities that surrounded the show. See a recap of the event in this newsletter.


Next up is our June chapter event at Poggenpohl, on June 22nd. Sure to be another great meeting

with a talk on optimizing your kitchen workflow and storage. Keep an eye on your emailbox, if you haven’t already signed up for it. Earlier in the week, the A&D Building with be hosting their Spring Market Day, on June 20th, as well. So, again, your calendar needs to highlight both days as an opportunity to meet, learn and enjoy.


And before you know it, there is our always anticipated Summer Social on July 25th! Before this Members Only evening party for our joint design community, NKBA is also hosting a day full of learning and activities. Keep an eye out for that invitation, and be sure to register early!


As always, these are not-to-be-missed events, and I know that we give back to our “family” members much more than we ask. Our New York design community truly is a family, one I value so highly. There's nothing like getting together every month to reconnect, and learn something new, as well. So, I close with a reminder that joining our chapter is easier than you think. JULIE SCHUSTER


June’s member spotlight: our very own Chapter President, Julie Schuster. Julie has had her own company for about 12 years, and also worked for a boutique design firm for a couple years before taking the leap to start her own company. She is a self-proclaimed career changer, and actually started off as a retail store fashion buyer, and then a fashion designer.


Julie chose to go back to design school at NYSID after her time in fashion, as she saw the process of both roles was to have a vision and see it come to life. She was drawn to interior design after creating her own home here in New York, and found that after her career in clothing design, the creative part of interior design really spoke to her.


What Julie loves most about this line of work is that each day is different. She holds the freedom to carve the exact type of career she wants. Having worked at supervising teams of people in the past, she understands that management is NOT the creative part, and intends to focus on keeping her firm boutique-sized so she can work directly with her clients.


Her favorite part of the job is actually the job site! That is where Julie finds that the magic happens. “There is nothing like having a vision, planning it, drawing and sourcing it—and then going to the site and seeing it fully realized. It still gives me chills when it all comes together,” says Julie. When asked what propelled her to be president of our chapter, Julie said that, like many things in life, it did not come to her as a fully fleshed out plan of action. She joined NKBA Manhattan as a member, with no plan to do more than enjoy the chapter and its events and activities. Over time, she realized NKBA had contributed so much to her career that she wanted to get more involved. Going from a committee member, to a committee chair, then to a board position in Programs and now as President, has truly been an evolution.


Julie’s advice to us all: “Enjoy the process, whenever possible. Don’t rush to get to the final goal—it’s always takes time. And if you can find fulfillment in all of the steps you need to go through, then every day of the learning, experiencing process can be exciting and joyful. Breathe… smile… and move ahead.”
