Sourdough 101 with Patrina
Come learn the easiest sourdough bread baking ever! You will learn about the care and feeding of a sourdough starter, how to make a wonderful loaf of bread from start to finish and take home dough to bake at home! Every student also takes home their very own sourdough starter! Please bring a mixing bowl (4qt or larger) and your favorite mixing spoon, and a lidded container for your dough ( minimum 12 cups) I get the McCormick storage containers from the dollar tree store.

Acupuncture with the Daoist Traditions School
The Daoist Traditions Acupuncture Clinic is located in Asheville NC. Their clinical interns are in the final phase of a rigorous four-year academic program and treat patients under the direct supervision of clinical faculty who are NC licensed acupuncturists. Interns complete 900 hours of clinical training to develop their skills as practitioners. The clinic provides 6,000+ affordable patient treatments each year and 500+ free treatments through non-profit partnerships and community events. Acupuncture has been part of the VA Whole Health System since 2018. It is recognized by the World Health Organization for its benefits for anxiety, depression, musculoskeletal pain, neurological pain, insomnia, stress, and so much more!

Pasta Making with Helene
Pasta is the world’s ultimate comfort food! Please join us for a fun, hands-on class to learn how easy and satisfying it is to make pasta from scratch without the use of fancy equipment. We will make four different shapes of pasta using two different doughs (a vegan flour pasta from Southern Italy and vegetarian egg pasta from Northern Italy). Best practice tips for cooking your pasta will be discussed. We will then taste test each shape with their own unique sauce preparation. Benefits of making your own fresh pasta: o Cooks in a fraction of the time; o Improved texture that clings to sauces; o Clean, whole ingredients without added preservatives; o Customizable; o The process of mixing, kneading and rolling pasta is therapeutic; o Bragging rights! Fly Casting Clinic for Beginners
Fly Casting Clinic for Beginners Fishing with a fly rod is a special experience that allows the angler to cast a nearly weightless lure that resembles the various insects trout love to eat. To cast a fly, you must learn how to cast the line itself. With a little practice and coaching, beginner fly casters can make basic casts with elegance and precision. Anyone can learn the techniques of fly casting. This clinic will be led by Matt Christian, an expert fly caster who taught at the Pisgah Center for Wildlife Education. Matt will be assisted by four experienced casters who will be help clinic participants master basic casts.

Fly Tying for Beginners
Tying fishing flies to imitate various insects that live in our rivers and are favorite foods for trout is a fun hobby. You will feel a special exhilaration when a fish takes a fly you tied. However, because it is so satisfying to tie an insect imitation, many fly tyers don't even fish and they donate their flies to Veterans organizations like Project Healing Waters and Wounded Warriors, cancer support groups like Casting for Recovery (women) and Reel Recovery (men), and youth fishing clubs. The skills used in fly tying are easy to learn and this creative process trains your brain and hands to improve dexterity. Whether following a traditional recipe or adding your own touches, you will enjoy learning the skills and about the insects they imitate. This fly tying clinic will be led by 20+ year Navy Veteran, Jim Cannon and Karl Brandt, both expert tyers and excellent teachers. All you need to bring is reading glasses if you use them. Jim and Karl will provide all the tools and materials to create your flies.

Mountain View Hunting Club in Del Rio, Tennessee, has generously invited our Veterans to join them for a guided quail hunt on Saturday, November 14, from 8:30 AM–3:30 PM.
